Blade: Crafted from Japanese VG-10 super steel which contains carbon, chromium, cobalt, manganese, molybdenum, silicon, and vanadium. The blade combines the best attributes of high carbon steel and stainless steel to make a tougher knife which is more rust-resistant, takes a killer edge and holds the edge longer. The blades are made from 3 layers of forged steel. The middle layer, VG-10 Stainless Steel, is laminated with high-carbon steel on each side, creating superior sharpness and edge life which lasts longer than normal knives. HRC 60-62. Handle: The handle is made of triple-riveted POM, a high quality synthetic polymer with properties of low water absorption, incredible strength, and high heat resistance for today?s demanding kitchens. Edge: 14°. Caliper: 2.4 ? 2.45. Angle: 70/30
